Leek and Potato soup

 My eldest daughter has asked if she can bring soup to school in a flask. So today, I’m making Leek & Potato soup and thought I’d share this simple and tasty recipe.



Leeks, onion, garlic, potatoes, cream and chicken stock (you can use vegetable stock) seasoning and juice from todays roast chicken. You can leave it out!


All diced small.


Added stock cubes, chicken juices and four pints of water.


And simmered for 40 minutes.


Blend, add cream


Season and serve…

    That looks really good and warming on a cold day. My favourite soup would have to be pumpkin, with tomatoe coming a close second.

    I’ve never tried pumpkin, but I do enjoy a tin of Heinz cream of tomato soup. My fave’s are creamy cauliflower or broccoli.

    Yes, she did. She had a bowl of it before we had Sunday dinner! She says her friends Mum makes her the same, but I reckon it’s Cup-a-Soup!

    I make a good potato amd leek soup.. I need to make one real soon..I use my blender..Hand one is not as good anymore..
