Chicken Cordon Bleu

I was honoured to have Chef (the artist formerly known as Hubby) cook dinner on Thursday night. He’d brought a tray of chicken fillets home from work (leftovers) and I suggested that I he make Chicken Cordon Bleu. I wish I’d have thought about taking a pic of the inside before we ate them all!

Rainbow Tomato Salad Recipe

½ small red onion, very finely chopped
2 small cloves garlic, very finely chopped
Balsamic vinegar, your good stuff
Extra virgin olive oil, again, your good stuff
Salt and pepper
Enough mixed tomatoes to fill your serving plate when sliced
Basil leaves

– Slice the tomatoes (about 1/2 cm thick) and arrange on a serving plate.
– Scatter over the red onion and garlic and drizzle with the balsamic and olive oil.

– Season and garnish with torn basil leaves.

This improves after marinating for a few hours. It makes an awesome addition to a BLT (bacon, lettuce and tomato) sandwich, which is a personal favourite and speciality of mine. I have spent more time than is reasonable refining this sandwich and I am making a note to self now to post about it.

I had my first at 34. It suited us. If I were to do it all again, I’d have children younger and have more!

Leek and Potato soup

  • Chop the vegetables into small pieces 
  • Sweat the leeks, garlic and potatoes in a little oil
  • Add stock
  • Bring to boil and simmer till potatoes are soft
  • Liquidize and season to taste

Sunday~ Roast loin of pork with crispy crackling and cider gravy

‘Chef’ loved the onions and gravy!

Monday~Chicken with creamy bacon penne

Tuesday~Lasagne and garlic bread

Wednesday~ Homemade plate meat pie

Thursday~Tesco’s  Finest* Irish Pork Cumberland Style Sausages with Colcannon, leeks,  petits pois and onion gravy

Friday~ The Chipper (Busy day)

Saturday~ Out for a family dinner. Maybe a Chinese.

*Last weeks menu went to plan. The 40 Clove Garlic Chicken was gobbled up in a second! I’ll definitely be cooking that again…

I bought the biggest chicken on the shelf!

Boiled the cloves for 2 minutes. They peeled more easily.

I added a big nob of butter and put it up the chickens bum rear with the bouquet garni.
