Tuesday~ Baked Parmesan Fish

Thursday~Vegetable Casserole with Crispy Topping

Le Creuset Piece:  Buffet Casseroles  Preparation Time:  20 minutes
Main Ingredient:  Vegetables–All  Cooking Time:  1 1/2 hours
Course:  Side Dish  Servings:  6 to 8 as a side
INGREDIENTS
  • 4 tbs. olive oil
  • 1 large red onion, roughly chopped
  • 1 lb. butternut squash, peeled and cut into ½” pieces
  • 1 lb. eggplant, cut into ½” pieces
  • 4 celery stalks, cut into ¼” slices
  • 4 zucchini, cut into ½” slices
  • 1 lb. canned crushed tomatoes with thier juice
  • 2 tbs. chopped fresh parsley
  • 1 tbs. balsamic vinegar
  • 1 tbs. sugar
  • 2 cups fresh white bread crumbs
  • 1 cup finely grated sharp Cheddar cheese
  • Salt and pepper
DIRECTIONS
1. Heat the oil in the buffet casserole over medium heat on the stovetop. Add the onion and butternut squash and fry gently until thy are lightly colored.2. Add the eggplant, celery, and zucchini and continue frying, turing the vegetables occasionally, for 4 to 5 minutes. Add the tomatoes with thier juice, basil, parsley, vinegar, and sugar with 1 cup of water and plenty of seasoning. Cover and simmer slowly for 1 hr 15 minutes to 1 and a half hours until the vegetables are tender; the squash will take the longest to soften.3. When the vegetables are tender, remove the buffet casserole from the heat. Mix together the bread crumbs and cheese with plenty of seasoning and scatter this evenly over the vegetables. Put immediately under a hot broiler to crsip and brown the top. Serve straight from the buffet casserole.

Spaghetti Bolognese (to be edited)

  I was supposed to be making this tonight, but decided to use the mince in the fridge rather than queue up in the butchers for 20 minutes to buy chicken fillets. Chef had asked for spaghetti bolognese last week and it didn’t happen. Here’s how I cooked it…

     

  I wasn’t happy with the mince, to be honest. It was cheap and fatty so I fried it, drained it and blended it a little. I normally buy the meat from the butcher…

A Great Evening Out

  As I mentioned a few days ago, we were having dinner in Roly’s Bistro on Friday. Well, that was last night and we had a great night! The food was perfect. I has Foie Gras And Corn Fed Chicken Terrine With Organic Strawberry Compote and a rare fillet. For dessert I had Creme Brulee, it was so good.

  We went onto a bar and boogied for a couple of hours, then back to the hotel bar for more drinks. By this stage (3am) I was on pints of water!

 We celebrated ‘Little Chef’s’ 36th birthday with  brothers, sisters and partners. I knew it was going to be a good evening from the start, when I passed THIS young man and his other half in the hotel corridor as we were going to our room. Nice!

 Talking of boy bands, have you heard this yet? Rule The World by Take That. It’s brilliant!

I don’t watch any regular TV  although I do enjoy The Barefoot Contessa, Masterchef Goes Large and Homes Under The Hammer.  I wouldn’t watch them every day.

Salad
What’s the scariest weather situation you’ve experienced?

Oh my God! I was petrified when we went to Blizzard Beach, Florida in June. The rain was so heavy and the lightening was so close. I met a lady called Jessie who calmed us all down (apart from Chef who thought the whole thing was hilarious)  The girls were hysterical and Spud kept his head under my armpit for a whole hour not daring to look.

Main Course
If you could wake up tomorrow morning in another country, where would you want to be?

England, in my best friends bed (if her husband is still away….or not, maybe) It would be so funny to see her face when she wakes up! She would do that pig-snorting thing she does whenever I make her laugh.

Dessert
What do you usually wear to sleep?

I wear different things depending on Chefs mood…   I like to wear my floral fleecy Dunnes Stores pyjama bottoms with a secret support top for one week a month. The rest of the month I wear little nighties.

  He spoils me. A couple of times a year, Chef will take me on a shopping spree. Today was one of those days. I really don’t enjoy shopping for clothes, unless I’m on my own. I like to browse alone in silence. I never try anything on. I’ll pick straight from the rack, pay and go. I suppose I’m lucky that what I chose, generally fits anyway. 

 But today, the first shop we came across was this one. Le Creuset. I’d rather go wild in here than in any other shop…

Well, I thought I was cooking that . I went upstairs to ‘model’ a few pieces and when I came down for his approval, this is what I saw….

Oy! My rack has been destroyed! He was so hungry and I was too slow…

And nothing goes to waste!

Book Club (update)

    I have such an impulsive, compulsive personality, so much so that today at the Toddler Group, I got chatting to one of the Mums who is in a Book Club ‘ring’. I asked to join! I have a few books on the shelf waiting to be read.

  I always struggle to get through the first chapter of a book if it doesn’t ‘grab’ me straight away.  I really need some inspiration to read. So, on the first Monday of every month, we’ll meet up to discuss the book,  get p***ed chatting, decide what to read next and have a meal. Isn’t that a good idea? Methinks so….

  So here’s the book I need to get hold of. But as yet, I can’t see it anywhere online. If anyone can get it to my place in the next week, I’d be grateful (I’d obviously pay the postage)

Beef Stew

   Chef asked for lambs liver and onions for dinner, but he won’t be home till late, so I  told him he was going to get suggested he could have something from the pan when he comes home. “Beef stew?”  I asked….”Ok, nice”…

 Just as well really, I have so many vegetables here to use up.

Simmering nicely and will be ready at 9.30pm

 

Chef said it was just right… 10/10 and a gold star!  Please e-mail me if you would like the recipe.
