Salmon and Prosciutto

 I’m sad to say, although it was good, I wouldn’t make this again unless it was for a group of friends who loved salmon! I thought Chef would have tried it, if only for something different. He asked for a sandwich…

Anyway, I enjoyed it!

Strange? There’s some prosciutto missing…..

Tip ~ Roll the prosciutto around the salmon straight from the wrapper

    Hi miss l. This is a great combination. What I have found to be successful is to cut the salmon into inch cubes, wrap in procuitto, and thread onto a skewer like kebabs. Then heat olive oil in thick-bottomed fry pan until almost smoking hot. You sear the kebabs on each side in the hot pan (exhaust fan going full pelt). This makes the procuitto crunchy. You then have the lovely salmon flavour with a salty crunch. Serve on top of mashed potato – yum yum. This presentation looks fab too – a good one for dinner parties (served with salad and french stick).
