Souper!

 Chef has brought home lots of bags of prepped veg, the best Valentines present ever! So, I’ll be making lots of soups for the next couple of days. Do you have a favourite soup? I’ll make it if you send the recipe…

    I love roasted vegetable soup. I roast the chopped veg, whatever I have but usually including, parsnip, carrots, garlic, courgettes, pepper, swede, celery etc for about 30 mins. I put the veg in a pot with a can or two (depending on amount of veg used) of chopped tomatoes and veg stock, season to taste. I simmer for about ten minutes then blend.

    I also make a thicker ‘sauce’ version of this which I use as a sauce for bolagnaise dishes as it gets extra veg into the children.
