Menu Planner Monday

I’m off to England on Friday morning for my brothers 50th. So this week is a short one, but an adventurous one, too. I’m making four things I’ve never attempted before.


And next week I can’t wait to make these, Nic’s Chicken Mug Pies

She’s a Jouster, too (I voted for her when she made this) Which brings me onto my entry for this months Royal Joust over at Jenns blog The Leftover Queen. I entered previously but didn’t get anywhere! It would be great to win and pick the three ingredients for the March Joust.

Lamb Cutlets on a Spiced Vegetable Broth

12 lean lamb cutlets
125g soaked soup mix (red split lentils, green split lentils, pearl barley and marrowfat peas)
1 white onion
2 sticks celery
2 med potatoes
1 eggplant (aubergine)
2 carrots1 red pepper
1/2 tsp cinnamon
1/2 tsp cumin
2 cloves garlic
freshly ground black pepper

Preheat oven to 180o
Cook the cutlets for 15 minutes


Dice the vegetables small
Fry onion till soft and add the spices
Add the vegetables and sweat for 5 minutes
Add  soup mix and stock, bring to the boil
Simmer for 20 minutes
Season to taste

Plate up and arrange 3 cutlets on top of each dish
I added a sprig of fresh coriander for extra colour

Roast beef, mashed carrot & swede, roasted parsnips, roast potatoes and gravy


Macaroni cheese for the children, Chicken Kiev, baked potatoes and peas for us


Fry-up for all.

Making our own pizzas

   I’ve never made macaroni cheese before (recipes welcome) so that will be a little challenge! The fry-up is just  a breakfast really. I have all the ingredients waiting to be used up. Mum’s Steak Canadienne teacakes!  Thin slices of beef grilled with onions on a toasted teacake (bread roll). I’m from a part of Lancashire, England where a bread roll is called a teacake.

Last nights Risotto (with pics)

 I’d included Risotto in my Menu Planner. I should have checked to see how much was in the bag! Not enough for four hungry children, but fortunately No.3 decided against it when she saw the peas and opted for a tin of Heinz Macaroni cheese!

What I threw in

Small amount of arborio rice

An onion

Chicken stock

Chicken leftovers from Sunday dinner

Frozen peas

Vegetable oil

Garlic puree

Pinch of salt /one grind of black pepper

Here’s a tip my neighbour told me. Most children don’t like the texture of pieces of onion, so blend it. So I did.


The secret of a good risotto is adding the right amount of stock.I added too much and had to drain some away. Add in three / four parts till stock is absorbed. The final consistency is the trick.

 (I must buy I new wok!)

 All ingredients are in now.

Heat through ……

 and serve…

Clearing up…

   I came down this morning to a kitchen of horror! I usually clear up before bedtime to make sure this doesn’t happen. So, that’s what I’m doing at the moment. Rummaging through cans, bottles and half eaten vol-au-vents.

 The party went well and the food was good. The trifle went down a treat, although I don’t like it particularly, the guests who hadn’t had trifle for years did!

I’ll tell you more later, must crack on…

 We are making little canapes now, without a cutter! An eggcup is the perfect size, then a pair of scissors to cut them out. No.1 is covering some of them with pate.

I’ve organised a Christmas Party for the Mums at the Toddler group I run. So, tonight, while you all wish I was blogging with you, I shall be eating and drinking with 15 other women on the loose!

  I found a couple of great websites for kids at Hallowe’en. Costumes, makeup, games etc. I’ll try a few of these with the children, they are already looking forward to Hallowe’en and have decided what they want to dress up as!
